Hillwood Distillery
In the quiet of a Tamar Valley micro-valley in Tasmania sits Hillwood Distillery. A place shaped by family hands and time well spent. Here, our copper pot hums away, built with care and a bit of stubborn Tasmanian ingenuity. Every drop that runs from it carries the river’s whisper, the patience of oak, and the simple truth of making something real.

Our Still
At the heart of Hillwood Distillery sits our 600L copper pot still. An original family design, primarily powered by renewable energy.
Created in collaboration with legendary local craftsman Terry Harper, the still went through 16 revisions before reaching the form you see today. Each refinement was a step closer to the unique spirit we’re proud to call Hillwood Whisky.
Distinct features such as the longer lyne arm, wider swan neck, and modified internal structure all help to shape the whisky’s character. The carefully designed heating system ensures the contents can never be overheated, preserving the integrity of the spirit.

And as a nod to our love of watercraft, the still carries a ship’s porthole for viewing and cleaning, a piece manufactured nearly 100 years ago by the same company that built the Titanic. It’s a detail that connects us to history, while shaping every drop of whisky we make today.
