Tamar Valley Distillery

Ollie looking out over the Tamar River from the edge of the Tamar Valley next to Tamar Valley Distillery

The Tamar River – or kanamaluka – is the heart of this place. A 70-kilometre estuary shaped by the tides, its banks are lined with rare black eucalyptus leaning towards the water, grounding us in Tasmania’s natural beauty.

Here, on the river’s edge, you’ll find Hillwood – a Tamar Valley distillery where every drop of whisky is crafted with time and care. Architecturally designed and built with the land in mind, the distillery takes its warmth from the still, its character from the river, and its welcome from the family who run it.

Step inside and you’ll notice the scent of native Tasmanian bushland mingling with the rich aroma of spirit in the making. Pull up a stool and you’ll find yourself part of the story – where whisky isn’t rushed, but shaped by hand, season after season.

This is the Tamar Distillery experience. Proudly Tasmanian. Single malt whisky, distilled slow.
